Evaluating DataTables - Dataset sizes?

I'm evaluating DataTables and I'm trying to find a good "cut off" of the number of cells that can be reasonably processed before switching over to server side processing? Looks likes there are also the sortingClasses options that improves performance. Is there any info on how much this would help?
